- The subject HOE24 Hotel management has its roots in HOE26 subject from the first year of study. Students will spread their knowledge about the hotel industry. The aim of the subject is also to prepare students for the state exam at the end of their third grade. Students will work with information about the levels and empowerment in hotel management, they will understand and explain the responsibilities and operations of Rooms, Food and Beverage and Maintenance Divisions. They will understand the current system of hotel classification in Czech Republic and central Europe. They will understand the hotel management of independent hotel and hotel chain; we will discuss the integration in the industry and impact of globalisation on hotel industry. We will have a look at the new trends in hotel management.
At the end of the course students should be able to make reasoned decisions about hotel management and operation. They will be able to make deductions based on the acquired knowledge about quality management, employees productivity, customer relationship management, green management and other aspects of hotel operations. - Osnova
- Hospitality industry evolution, basic terminology of hotel industry, hotel and accommodation services.
- The current status of hospitality industry in Czech economy. Hotel classification. Hotel organisations and associations.
- Organisation structure of hotel management. Hotel divisions´ operation and responsibilities.
- Rooms division and its operations Food and Beverage division and its operations, Maintenance division, Housekeeping, and other supporting hotel departments.
- Economy department in a hotel, hotel income and pricing policy
- Integration processes in hotel industry. Hotel chains vs. independent hotels. Franchising, reservation systems, Management contracts, hotel cooperation.
- Managing customer services, customer relationship management, Dealing with complains in hotel.
- Quality management, green management.
- Hotel produktivity, hotel statistics. New trends in hotel industry.
